Hello! It’s me…. I know it’s been a hot minute since I’ve posted a recipe. I’m tellin’ y’all… this summer heat just shut. me. down. Along with the finally cooler weather, I’m bringing you all a classic quick cookie recipe with an apple butter twist. If there is anything that screams fall, it’s apple butter.
Thumbprint cookies have sorta become my go-to cookie recipe for quick fixes when you are suppose to bring something to a party and were too busy watching cat videos on YouTube to remember to make them until the last minute. They totally look planned, while really only taking a few minutes to make. Plus, sticking your [clean] thumb into a cookie is kinda satisfying. Don’t lie to me… you know it’s true!
So… in full disclosure, I didn’t really just make these lovely bites to say hello to you peeps again. I have worked with FeedFeed since they launched a couple years ago, editing several of the feeds (all the good ones… pies, cakes, tarts), and they have asked me to stick my face on camera a couple times a month for some feature recipe videos on their Instagram Stories. If any of you have met me (you know… in the real world kinda thing/places), you’ll know that I am not a fan of being on the lens side of the camera.
Blogging has seriously made me push myself out of my comfort zone. “What? You sit at a computer and type stuff out and make cakes all day… What are you talking about?!” — I know it sounds weird, but I am a bit shy and uncomfortable telling random strangers all about my day and letting them see my house. Part of this whole thing might be that I recently moved into a new place close to downtown Nashville, doing the opposite of starting there and moving away that most of the thousands of people flooding into the city lately are doing.
It’s been a couple months now, and I am finally starting to get around to doing the whole new furniture and stuff thing. To my credit, I was traveling for a bit. Like a week… The rest I can blame on a collapsing closet shelf at 3am, followed by a 2nd purge so I wouldn’t have to put as much crap back in storage, followed by more cat YouTube videos. All of that combined with a million and one photography projects (that I am very thankful for) with new fall menu rollouts. It’s STRESSFUL.
I am not the type that knows what to put with what and where. (Do any of you happen to have Jeff Lewis’ digits? Asking for a friend…) Who knew that a damn light gray couch could come in 50 actual shades of grey (simmer down, ladies), and be called things like “turbo iron” and “Gainsboro”. I’d love to know who’s job it is to name these things and shadow them for a day. I can only imagine what they do all day to figure these things out. ANYWAY — What I’m trying to say in this ramble is that life is stressful and hard and YOU NEED SOME COOKIES. That’s all.

- 1⅓ cup flour
- ½ cup walnuts
- ½ teaspoon salt
- ¼ teaspoon baking powder
- ½ teaspoon ground cinnamon
- ½ cup butter, softened
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 egg
- ½ cup apple butter
- Preheat oven to 350 F.
- Combine top 5 ingredients in food processor.
- Pulse 4-5 times until nuts are fully incorporated into flour.
- In mixer, cream butter and sugar until light and fluffy, about 3-4 minutes.
- Add dry mix to the creamed butter. Mix well.
- Add egg, vanilla and mix until fully combined.
- On prepared baking sheet, add spoonfuls of dough.
- Using a slightly wet thumb, press into the center of each cookie.
- Fill well with apple butter.
- Bake until golden, about 20 minutes.
- Remove to cool and enjoy.
