Sweet Potato Pulled Pork Waffles

Crispy, simple sweet potato waffle topped with homemade pulled pork bbq, fried egg, and sriracha.
Serves: 2 servings
  • 1 large sweet potato, grated
  • 1 egg, beaten
  • 2 tablespoons flour
  • ¼ teaspoon baking powder
  • 1 tablespoon butter, melted
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • ½ teaspoon vanilla extract
  • ½ tablespoon milk, optional (if needed - see instructions)
  • pulled pork, fried eggs, sriracha
  1. Squeeze grated sweet potato in cheesecloth or paper towel until moisture is removed as much as possible.
  2. Combine and sift flour and baking powder well.
  3. Combine grated sweet potato with other ingredients.
  4. Add the optional milk if needed for a thinner consistency.
  5. Cook in waffle maker by manufacturer instructions until exterior is crispy.
