Funfetti Whoopie Pies with White Chocolate Coating and Sprinkles
Serves: 1 dozen large whoopie pies
  • Pillsbury Funfetti Cake Mix, 1 box
  • 3 eggs
  • ⅓ cup vegetable oil
  • ½ cup water
Cream Filling
  • 4 oz cream cheese, room temp.
  • 4 ounces butter, unsalted - room temp.
  • 1 teaspoon vanilla
  • 2 cups powdered sugar, sifted
White Chocolate Coating
  1. Pre-heat oven to 350 F.
  2. Mix Funfetti Cake Mix with water, eggs, vegetable oil in mixer until well combined.
  3. On parchment lined baking sheet, place two tablespoons of batter in circle, about 1½ inches in diameter.
  4. Bake for 8-10 minutes (9 minutes was the magic number for me) until the bottom edges are barely browning. Remove and cool on pan/paper before transferring to cooling rack.
  5. While cakes are cooling, make frosting:
Cream Cheese Frosting
  1. In mixer, combine cream cheese, butter and vanilla until combined.
  2. Slowly add powdered sugar and stir on slow speed until combined.
  3. Mix on medium speed for a minute.
  4. Transfer to piping bag.
Finished Cakes
  1. Pipe cream onto bottom of one cake and place second on as top (don't overfill).
  2. Microwave shortening, candy coating for 30 seconds, stir well. Repeat 30 second microwave and stir as needed until just melted and combined. (1 minute for me)
  3. Cool coating to handle.
  4. Dip whoopie pies in coating and place on parchment-lined cookie sheet.
  5. Place dipped pies in refridgerator/freezer to cool and set coating quickly. Repeat dips until coated to own preference. (three for mine)
  6. On the last coat, immediately sprinkle with sprinkles.
  7. Cool and enjoy! Stores well in container for several days in refrigerator. Server at room temp. for best taste.
