Ingredients
Eclair Base (Choux Pastry)
  • ½ cup (160 g) milk
  • ½ cup (160 g) water
  • 8 tablespoons (225 g) butter, unsalted
  • 1 teaspoon (4 g) sugar
  • ½ teaspoon (3 g) salt
  • 1 and ½ cups (200 g) flour, all-purpose
  • 6-7 (330 g) whole eggs
Egg Wash
  • 2 (100 g) eggs
  • ½ tablespoon (7 g) milk
  • pinch of salt
Sweet Potato Pastry Cream
  • 2 cups (490 g) milk
  • 1 vanilla bean pod, cut and scraped or 1 teaspoon (5 g) vanilla bean paste (or extract)
  • ¾ cup (150 g) sugar
  • 5 tablespoons (50 g) cornstarch
  • 6-8 (110 g) egg yolks
  • ¼ teaspoon (1 g) salt
  • 1 (about 175 g) sweet potato, roasted, cooled, mashed
Marshmallow Glaze
  • 1½ cups (140 g) marshmallows
  • 1 tablespoon (15 g) water
  • 2 egg whites
  • ½ teaspoon cream of tartar
  • 2½ cups (315 g) powdered sugar, sifted
Finish
  • mini marshmallows
  • salted caramel sprinkles, optional (find them here)
Instructions
Sweet Potato Pastry Cream
  1. Combine egg yolks and sugar in a bowl and whiskey until light, fluffy, smooth.
  2. Add cornstarch and salt to egg mixture and whisk well to combine. Set aside.
  3. In a clean medium saucepan, combine milk and vanilla.
  4. Bring milk mixture to a boil and immediately remove from heat.
  5. Whisking while adding, stream about ¼ cup of the hot milk mixture into the egg mix.
  6. Place milk back on medium heat and slowly add all of the tempered egg mix, continuing to mix throughout.
  7. Bring mixture to a slow boil, stirring and cooking for an additional 2-3 minutes to thicken.
  8. Move to bowl and cool until slightly warm, but not hot with plastic wrap directly on top of cream in bowl to prevent a skin from forming.
  9. Move to mixer with whisk. Beat in sweet potato until completely combined.
  10. Move back to bowl with plastic wrap on top and chill until completely cool.
Eclair Shells
  1. I strongly encourage you to weigh all ingredients. I use this kitchen scale.
  2. Pre-heat oven to 375 F / 190 C.
  3. In a medium heavy-bottomed saucepan (for best results, don't use a non-stick coated), heat water, milk, butter, sugar, and salt over medium heat.
  4. While heating, weigh out flour and eggs.
  5. Once the milk/water/butter mix reaches a slight boil, remove from the heat (leave the burner on) and dump all of the flour into the mix at once.
  6. Stir quickly with a wooden spoon.
  7. Return to the heat and stir CONTINUOUSLY. You will start to see the dough pull away from the pan after a few minutes. Keep stirring vigorously, cooking for 2 minutes.
  8. You should be left with a slight film on the bottom of the pan. Remove the pan from the heat.
  9. Transfer the dough to a mixer with a paddle attachment.
  10. With the mixer on low-medium speed (about a 4 on a KitchenAid), add one egg at a time from the cup o' eggs that you have ready.
  11. Do not add another egg until the one you have just added is completely incorporated.
  12. Continue to mix until eggs are mixed well and dough is glossy and smooth. It will remain somewhat thick for piping. The dough should ribbon when it falls back on itself when finished.
  13. Transfer to a piping bag with an open or large tip. Alternatively, you can use a large star tip to cut down on possible cracks, which allows the dough to expand more easily.
  14. Prepare a baking sheet with parchment or a silicone baking mat.
  15. Pipe éclairs on the baking sheet. Press down any points on the any points with a damp finger.
  16. Beat egg wash together well and brush on top carefully with a pastry brush. Try to avoid egg on the baking sheet.
  17. Optionally, mist the tops of the eclairs with water. This will help with ensuring they puff well.
  18. Bake for about 25 minutes, or until golden brown. Do NOT open the oven until you are sure they are golden and set in shape.
  19. When golden, prop oven door very slightly with a wooden spoon and lower temperature to 315.
  20. Cook for an additional 20 minutes to dry the puffs out. You can also just turn the oven off after about 20 minutes and allow the éclairs to finish and cool in the oven before removing. This is my preferred method, if time permits.
Marshmallow Glaze
  1. In a large microwavable bowl, place marshmallows and water.
  2. Microwave for 1 minute and remove. Marshmallows will double in size.
  3. In a separate bowl, add egg whites and cream of tartar (to stabilize).
  4. Beat with whisk/mixer until foamy.
  5. Add marshmallow, powdered sugar, vanilla, and mix completely.
  6. If mixture is too thin, add additional powdered sugar.
Finishing
  1. Pipe pastry cream into eclair shells.
  2. I prefer to use THIS tip for piping the eclair. It makes it much more simple and clean.
  3. Dip filled eclair shells into the glaze.
  4. Finish with marshmallows and salted caramel sprinkles.
