I don’t have kids. I mean… I don’t have children, per say. My two cats seem to be a lot of work, but since I’ve weaned them from their diapers, it’s pretty simple. Lots of my friends have tiny kids that seem to be a lot of work. Getting them ready for school, rushing them off to baseball or whatever it is that kids play when you can pull them away from their tablets and cell phones; all of those things that keep people busier than should be humanly possible. I was chatting about all of this with some friends recently and was asked for recipe suggestions to fit into the mix of quick things to make at home without having to grab fast food every night.
That’s how it all started. I certainly understand not wanting to come home and cook anything because you. are. exhausted. Maybe it’s that I am now in my (very early, thank you) 30’s. Adulting is tough, y’all.
My answer — Chicken Caesar Naan Tacos. Even those picky brat kids of yours will enjoy these.
I wish I had timed myself, because I think this may be the fastest recipe to make to date. I pulled out some leftover grilled chicken that I had (you could even use the kind in the bag that is already cooked in a rush), chopped some romaine, grabbed a pack of Stonefire Mini Naan, and fired up the grill.
I used naan recently in a sweeter post, Naan Campfire S’mores. I don’t even want to tell you how many I’ve had since posting that. It’s embarrassing. Marshmallow counts as a protein or something, right? I’ve been a long-time Stonefire customer, and was thrilled to partner with them to create a few unique recipes using the breads. For this recipe, I used the Mini Naan. It’s absolutely the perfect size for a great taco. I snatch these up and just keep a few in the freezer. They’ve become a staple in my house this summer.
You can find the naan in the bakery or deli department. I grabbed mine from my local Kroger. It is fresh, made without preservatives. You can cook it fresh, or freeze it for a rainy day. Grilling it adds the perfect amount of smoke to compliment the tacos.
I’m that dude that is trying to make burgers when the first snow hits. I love, love, love to grill, y’all. Can’t stop. Won’t stop. While charcoal is best for flavor, the faster gas option is what I ended up using this round. Why? Because I was tiiiiired. Remember? Adulting. — Heat it up on high while you prepare all of your ingredients and you will be ready to sizzle in no time. This is the best meal option for crazy school days, or weekend relaxing breaks.
Push those crazy school days, crazy work days, crazy summer days aside. 5 minutes and you have a perfect meal to share with friends and family.
- 1 package Stonefire Naan Mini Original
- 8 oz chicken breast
- 8 romaine lettuce hearts
- ⅓ cup parmesan cheese, freshly grated
- ¼ cup caesar dressing
- freshly ground black pepper
- Heat grill on high heat.
- Season chicken with salt and pepper.
- Grill until tender and cooked throughout.
- Set chicken aside to rest.
- Grill naan on both sides.
- Fill naan with lettuce, chicken.
- Top with caesar dressing and grated parmesan.
- Finish with black pepper and enjoy.
