Champagne battered fried onion rings recipe from Southern Fatty.

Ingredients
  • 2 large onions
  • 2 cups flour, ap
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon pepper, ground
  • 2 eggs, lightly beaten
  • 1 cup Champagne
  • extra flour (with a bit of salt and pepper)
  • oil for frying
Instructions
  1. Heat deep fryer oil to 350 F.
  2. Cut onions into large ¾ to 1 inch slices. Take apart and set aside.
  3. Mix all of the dry ingredients in a bowl.
  4. Add egg and combine well.
  5. Slowly whisk in Champagne until you have a fluid batter. It should still be a bit thick but run well.
  6. Place flour and a bit of salt and pepper in a bowl.
  7. Dredge the onion rings in the flour mix, shake off excess well.
  8. Dip into batter, covering completely. Let excess drop off.
  9. Fry in small batched until golden, about 5 minutes.
  10. Cool on paper towels and salt.
  11. Enjoy with a glass of champs!
