Champagne Onion Rings

- 2 large onions
- 2 cups flour, ap
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon pepper, ground
- 2 eggs, lightly beaten
- 1 cup Champagne
- extra flour (with a bit of salt and pepper)
- oil for frying
- Heat deep fryer oil to 350 F.
- Cut onions into large ¾ to 1 inch slices. Take apart and set aside.
- Mix all of the dry ingredients in a bowl.
- Add egg and combine well.
- Slowly whisk in Champagne until you have a fluid batter. It should still be a bit thick but run well.
- Place flour and a bit of salt and pepper in a bowl.
- Dredge the onion rings in the flour mix, shake off excess well.
- Dip into batter, covering completely. Let excess drop off.
- Fry in small batched until golden, about 5 minutes.
- Cool on paper towels and salt.
- Enjoy with a glass of champs!
