Salt Crusted Baked Potatoes

Super simple salt crusted baked potatoes at home! By SouthernFATTY.com.
Serves: 2 potatoes
Ingredients
Instructions
  1. Pre-heat oven to 425 F.
  2. Scrub, wash and dry potatoes.
  3. Wrap in plastic wrap, poke with fork or knife and microwave potatoes on high for 4 minutes. This step can be skipped, if desired. Increase baking time to one hour, if so.
  4. Remove from microwave and let cool enough to handle.
  5. Pour salt onto a small plate and set aside.
  6. Rub olive oil completely over potato.
  7. Roll potato well in salt. (see pictures in blog post)
  8. Place in oven-safe dish or on baking tray.
  9. Bake for about 40 minutes. (1 hour if not microwaved)
  10. Cool slightly and enjoy!
