Wrap in plastic wrap, poke with fork or knife and microwave potatoes on high for 4 minutes. This step can be skipped, if desired. Increase baking time to one hour, if so.
Remove from microwave and let cool enough to handle.
Pour salt onto a small plate and set aside.
Rub olive oil completely over potato.
Roll potato well in salt. (see pictures in blog post)
Place in oven-safe dish or on baking tray.
Bake for about 40 minutes. (1 hour if not microwaved)
Cool slightly and enjoy!
